Martian Vegan potatos
Just like in “The Martian” these Colombian small chips or fries are the stars in the recipe. If we could survive three years with these chips, I think we would because they are delicious. Here I give you the recipe with a Tex-Mex touch (Houston, here we are)
- small potatoes
- Olive oil
- ¼ teaspoon of garlic powder
- ⅛ teaspoon of salt
- Ground pepper to taste
- 1 tablespoon of vegan butter
- ½ cup of grated vegan cheese
- (Optional) a pinch of chipotle chili powder
For the topping
- Vegan sour cream
Preheat oven to 400 F.
Using a fork, poke the potatoes everywhere and put them in the microwave for 5 minutes at full power.
Place hot potatoes with olive oil, garlic powder, salt and pepper for 8 minutes, then flip the other side.
Let potatoes cool down for 5 minutes, and then make a cut along the length of the potato. You are about to make small capacillos potato (as pictured) gently pinching the corners toward the center.
Place vegan butter and cheese, baked in the oven again until the cheese melts.
Add the topping: guacamole, Sriracha, vegan sour cream and chives.
