Healthy couscous recipe to enjoy the weekend


  • 1 Eggplant
  • 100 gr. of couscous
  • 1 chive
  • 30 gr. of butter
  • raisins
  • parsley
  • Mint leaves
  • Salt
  • Pepper
  • Cinnamon
  • Clove
  • Oil
  • Water

Toast the couscous without oil and then put to boil for 20 minutes, get it out, strain and squeeze. Cut the eggplant with the skin in slices and mixed with spices and a splash of oil, chop the onion and sauté the eggplant mixture and grapes. Melt the butter in a skillet and cook the couscous with a little salt and pepper. Serve it by placing a bed of couscous, place the eggplants on top and decorate with mint leaves.
