4 Light breakfast to surprise Mom

Peach Smoothie

Ingredients: 1 1/2 cup of peaches, 1/2 cup coconut milk, 3/4 cup Greek yogurt, 1 tablespoon honey (to taste: cinnamon, vanilla and nutmeg) Preparation: Blend everything and serve in a glass. Sweet Potato and Kale Frittata

This is an explosive combination! Sweet sweet potato (sweet potato) and savory kale (kale). You can do this with any vegetable frittata in your fridge. Ingredients

  • 6 large eggs
  • 1 teaspoon of salt
  • ½ teaspoon of depimienta
  • 2 large sweet potatoes
  • 2 Tbsp of olive oil
  • 1/2 cup of firmly packed chopped kale
  • ½ small red onion
  • 2 cloves of garlic
  • 3 oz. of Goat cheese


  1. Preheat oven to 200 degrees C. Beat eggs with salt and pepper.
  2. Saute chopped sweet potatoes diced hot cooking oil and then 10 minutes in the oven until potatoes are tender and golden brown.
  3. Kale saute with onion and garlic. Stir in 1 tablespoon of oil, then pour the potatoes and eggs evenly. Cook for 3 minutes.
  4. Sprinkle with goat cheese.
  5. Bring the pan to the oven for 10 minutes until set the frittata.


Healthy Flourless Brownies

Chia pudding with fruit

This is a “new classic” in the brunches. Chia pudding, made with chia and coconut milk is a rich way to leverage the properties of chia and fruit.
