Es el día de la madre, y como buenos hijos queremos sorprenderla, agradecerle por estos años maravillosos donde ha estado con nosotros para reír, para llorar, para opinar y para apoyar. Hoy quise traerles una receta rica y saludable, especial para ellas: Panquecas de avena para mamá

Las panquecas de avena son un plato exquisito, saludable y alto en fibra. Puedes acompañarlo con frutas o mermeladas naturales (sugar free preferiblemente). Es una opción distinta a lo tradicional, con un sabor delicioso. ¡Disfruten!

BENEFICIOS DE LA AVENA

Ingredientes:

  • 1/2 taza de leche
  • 1 huevo
  • 1/2 taza de avena en hojuelas
  • Harina de almendras o coco (para espesar si está muy líquida)
  • 1 pizca de sal
  • Stevia

Preparación:

En la licuadora mezcla todos los ingredientes hasta conseguir una masa relativamente espesa (puedes espesarla con la harina de almendras si está líquida). En una sartén antiadherente agrega una porción y expande hacia afuera, cocina a fuego medio bajo. Cuando no veas humedad por arriba, voltea la panqueca y dórala por el lado contrario. Si lo ves necesario, puedes engrasar la sartén con un poquitito de aceite de oliva.

Para acompañar este plato puedes colocar frutas (Como fresas y banana), miel y un poco de queso blanco rallado. ¡Yummy!

Oatmeal Pancakes

When I think about oatmeal, my mom comes out. The cinnamon smell and the oatmeal melting in my mouth , the sweet and rich texture and of course, everything I can cook with it. Pancakes, OMG, I can’t live without them. Of course I always try to look for a healthier recipe using different ingredients. But for tomorrow, I want my oatmeal pancakes. Ingredients

  • 1.1 ounces all-purpose flour (1/4 cup)
  • 1 cup quick-cooking oats
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup nonfat buttermilk
  • 2 tablespoons butter, melted
  • 1 large egg

Directions

Weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine the first 7 ingredients in a medium bowl, stirring with a whisk.

Combine buttermilk, butter, and egg in a small bowl. Add to flour mixture, stirring just until moist.

Heat a nonstick griddle over medium heat. Coat pan with cooking spray. Spoon about 2 1/2 tablespoons batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned.
