Se me hace agua a la boca con el título de este platillo. El pimentón es una hortaliza que contiene mucha agua, bajas calorías y grasas, alto contenido de fibra y vitamina C. Para los que les cuesta integrar los vegetales dentro de sus comidas, esta es una receta divina donde los vegetales adquieren un sabor delicioso.

Ingredientes para la receta Pimentones rellenos de carne: (Para ocho personas)

  • 16 pimientos del piquillo
  • 300 gr. de carne picada (ternera y/o cerdo)
  • 2 cebollas
  • 2 dientes de ajo
  • 1 vaso de salsa de tomate (natural)
  • 1 vaso de caldo de carne
  • 2 cucharadas de harina
  • 1 vaso de vino de jerez
  • 1/2 vaso de nata líquida
  • aceite extra virgen
  • sal
  • pimienta

Preparación

Para el relleno, pica la otra cebolla y el ajo. Rehógalo en una sartén con un poco de aceite y sal. Añade la carne picada salpimentada y cocínalo un par de minutos. Sin apartar del fuego, agrega la nata y déjalo reducir durante 3-4 minutos. Rellena los pimentones con la carne y colócalos en una cazuela ancha. Cuece a fuego lento durante 10-15 minutos. Normalmente yo agrego salsa de tomate sola por encima de los pimentones al momento de la cocción, pero si quieres una salsa más elaborada (y con más calorías) te dejo la receta de la salsa.

(Opcional)Para hacer la salsa pica finamente una cebolla y un diente de ajo, y ponlos a sofreír en una cazuela con aceite de oliva. Cuando empiece a dorarse la cebolla, añade la harina, la salsa de tomate, el caldo y el vino de jerez. Deja reducir durante unos 10 minutos. Cuando esté lista añádela a los pimentones luego de rellenarlos con la carne.

  • 2 garlic cloves
  • 1 cup of tomato sauce (natural)
  • 1 cup of beef broth
  • 2 tablespoons of flour
  • 1 glass of sherry
  • 1/2 cup of cream
  • extra virgin olive oil
  • salt
  • pepper

Preparation

For the filling, chop the other onion and garlic. Rehógalo in a pan with a little oil and salt. Add the spiced ground beef and cook a couple of minutes. Without remove from heat, add the cream and let it reduce for 3-4 minutes. Fill the peppers with the meat and place in a large saucepan. Simmer for 10-15 minutes. Normally I add tomato sauce alone over the peppers when cooking, but if you want a more elaborate (and more calories) you leave the recipe salsa sauce.

(Optional) To make the sauce, finely chop an onion and a clove of garlic, and put them to fry in a pan with olive oil. When the onion begins to brown, add the flour, tomato sauce, broth and sherry. Let reduce for about 10 minutes When ready, add it to the peppers after filling them with meat.
