¡Los risottos no sólo son de arroz! Y si no me creen hoy les traigo un risotto a base de quinoa, mejor conocido como “quinotto”.  La diferencia está en que la quinoa aporta menos grasas, y no es un cereal procesado como el arroz arbóreo que se utiliza para el platillo tradicional.

 

La preparación de este quinotto es sumamente sencilla y parecida a la del risotto. Se las comparto:

Ingredientes:

  • 500 g (1 lb 2 oz) de quinoa
  • 2 litros de agua hirviendo (mejor si se hace con caldo)
  • 4 cucharadas de mantequilla
  • 1 cebolla, finamente picada
  • 5 dientes de ajo, finamente picados
  • 250 g (9 oz) de champiñones, cortados en láminas
  • 1 cucharada de pistilos de azafrán
  • 1 taza de vino blanco, seco
  • 1 taza de crema de leche
  • 200 g de queso parmesano rallado
  • Sal
  • Pimienta
  • Nuez moscada
  • 4 cucharadas de perejil, picado
  • 1 cucharada de aceite vegetal

Cómo preparar el Risotto:

  1. Lavar la quínoa, restregando bien, hasta que el agua salga clara y limpia. Agregar al agua o caldo hirviendo y cocinar hasta que la quínoa esté graneada (aproximadamente 12 minutos en agua hirviendo). Colar y enfriar.
  2. Colocar la mantequilla con el aceite vegetal en una sartén grande y agregar la cebolla y el ajo. Dejar cocinar unos minutos a fuego lento. Agregar el azafrán, el vino, los champiñones, nuez moscada, sal, pimienta y crema de leche. Llevar a hervir e incorporar la quinua graneada. Cocinar hasta que tome una textura untuosa. Agregar el queso parmesano y el perejil picado.
  3. Servir en el centro de un plato, y espolvorear con queso parmesano rallado.

Quinoa Risotto Recipe

Risottos are not just made of rice! And if You don’t believe me today I’ll give you a quinoa based risotto recipe, better known as “quinotto”.  The difference is that quinoa provides less fat and is not a processed cereal like the rice used for traditional dish.

This preparation is extremely simple and kumquat similar to the risotto. I will share them:

Ingredients:

  • 500 g (1 lb 2 oz) of quinoa
  • 2 liters of boiling water (better if made with broth)
  • 4 tablespoons of butter
  • 1 onion, finely chopped
  • 5 cloves garlic, finely chopped
  • 250 g (9 oz) mushrooms, cut into slices
  • 1 tablespoon saffron pistils
  • 1 cup dry white wine
  • 1 cup heavy cream
  • 200 g grated Parmesan cheese
  • salt
  • pepper
  • nutmeg
  • 4 tablespoons parsley, chopped
  • 1 tablespoon vegetable oil

How to prepare the Risotto:

  1. Wash the quinoa, scrubbing well, until water is clear and clean. Add to boiling water or broth and cook until the quinoa is grained (approximately 12 minutes in boiling water). Strain and cool.
  2. Place the butter and vegetable oil in a large skillet and add the onion and garlic. Let simmer a few minutes over low heat. Add the saffron, wine, mushrooms, nutmeg, salt, pepper and cream. Bring to a boil and add the quinoa grained. Cook until it takes a creamy texture. Add the Parmesan cheese and chopped parsley.
  3. Serve in the center of a platter and sprinkle with grated Parmesan cheese.
