Ingredients: sweet potato, red wine vinegar, sugar, onion, salt, black pepper, flour tortillas, spinach, mozzarella cheese and olive oil.
Cook the sweet potatoes and mix with red wine vinegar, red onion, mozzarella and spinach. Add salt and pepper. Make quesadillas with flour tortilla and warm up in the griddle with a little olive oil.
