Chia has become the favorite ingredient of the year. This seed should be part of our plates more followed, especially if it’s a delicious healthy dessert like this chia pudding with mango pieces.

Chia seeds are categorized as superfoods because they are high in fiber, antioxidants, calcium, protein and omega 3 fatty acids. The chia is excellent for weight loss because it causes cravings and make us feel fuller. How is this? It turns out that Chia absorbs 10 times its weight in water, forming a thick gel that gives a sense of satiety. That’s why when we mix chia with any liquid (such as water, milk or juice) form a gel for their healthy fiber, which makes us feel full longer.

 

This is a version of the chía pudin that we already did, but adding some delicious mango pieces layers. This fusion enhances the flavors that combine this rich dessert. Here’s the recipe!

Delicious chia pudding with mango pieces

Ingredients

  • 1 ¼  oz of coconut milk
  • 6 tablespoons of chia seeds
  • 5 tablespoons of grated coconut
  • 6 tablespoons of maple syrup
  • 1 tablespoon of vanilla extract
  • 1 fresh mango, diced

Preparation  

Mix coconut milk, chia seeds, grated coconut, maple syrup and vanilla extract in a bowl. Mix just until everything gets combined well. Let stand for 30 minutes at room temperature to absorb all the flavors chia.

Mix again, cover it with plastic wrap and then cooled for at least 3 hours. This will make chia gel is generated. To serve, let it stand for about 15 minutes outside the refrigerator.

When ready to serve, cut some fresh diced mango and began to make pudding layers. Alternating pudding with mango until the cups or glasses where they are serving are filled. Top with some shredded coconut and served / kept in the fridge.
