I always look for vegetarian options for this day. We must be respectful of our guests and when we got to another house or someone is in ours we can give them several options that don’t include animal protein.

I tried to make a vegan turkey and it came out a mess. I also bought one of those commercially sold and it sucked too.So we better prepare more delicious options with plenty vegetable and grain to give thanks for all our blessings and let the turkey live happy.

Mushroom Cream 

  • ½ cup of cashews
  • 2 cup of water
  • 1 teaspoon of salt
  • 3 tablespoons of cornstarch
  • ½ teaspoon of garlic powder
  • 1 tablespoon of nutritional yeast
  • ½ cup of chopped onion
  • 1 cup of diced mushrooms

thanksgiving vegan dishesCook the onion and mushrooms in ¼ cup water. In the meantime, blend the cashew nuts in a cup of water until well creamed. Add the remaining water and the rest of the ingredients and blend again.

When the onions and mushrooms are soft add the mixture of cashews, stirring constantly until thickened.

For soup or mushroom sauce dilute with water, soy milk, almond or vegetable broth and add seasoning to taste.

Pumpkin Creme Brulé

  • 1 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of cayenne pepper
  • 1/2 teaspoon of grated fresh ginger
  • 3/4 teaspoon of freshly grated nutmeg
  • 5 egg yolks or egg substitutes (found in veggie markets)
  • 1 1/2 cups of whipping cream (they also sell coconut milk)
  • 1/2 teaspoon of natural vanilla extract
  • 1/8 teaspoon of salt
  • 6 tablespoons of organic pumpkin puree
  • 1/3 cup plus 4 teaspoons of granulated sugar
  • 1 tablespoon of firmly packed brown sugar

Preheat the oven to 325 degrees F. You’ll need a pan or square mold with boiling water ready to do a water bath, plus 4  6-ounce molds.

Pour the thick cream in a small pan stir with cinnamon, cayenne pepper, ginger and nutmeg.

Heat the cream mixture over medium-low heat until bubbles form around the edges of the pan and steam starts to rise from the surface, about 3 minutes.
Remove from heat and let stand for 15 minutes.

In a large bowl, beat the egg yolks, vanilla, salt, pumpkin puree, sugar (1/3 cup granulated) and brown sugar until smooth and well blended.

Then slowly pour the cream mixture, stirring until well blended. Strain through a sieve (strainer). Divide mixture evenly between the molds and place in a large baking dish. Add boiling water to fill the bigger until the middle of the sides of the molds mold.

Cover the pan lightly with foil and bake for about 30 minutes.
Transfer from the molds to a rack and let it cool to room temperature. Cover with plastic wrap and refrigerate for at least 4 hours or up to 3 days.

Just before serving, sprinkle 1 teaspoon granulated sugar evenly over the surface of each of the molds. Use a kitchen torch according to the manufacturer’s instructions carefully and if you desire.

Siempre busco opciones vegetarianas para este día. Debemos ser respetuosos con nuestros invitados y cuando vamos a otra casa o recibimos a alguien en la nuestra podemos darles varias opciones que no incluyen proteína animal.

Yo traté de hacer un pavo vegetariano y me salió …un asco. También compré uno de los que venden comercialmente y …un asco. ASí que mejor preparemos mas opciones ricas y con mucho vegetal y grano para que demos gracias por todas nuestras bendiciones y el pavo…viva feliz.

Crema de Hongos

½ taza de nueces de marañón (cajú, anacardo, nueces de la India, cashews)
2 tazas de agua
1 cucharadita de sal
3 cucharadas de fécula de maíz (maizena)
½ cucharadita de ajo en polvo
1 cucharada de levadura nutricional
½ taza de cebolla picada
1 taza de hongos champiñones cortados en cubitos
Hierve la cebolla y los champiñones en ¼ taza de agua. Por mientras, licúa las nueces de
marañón en una taza de agua hasta que estén bien cremosas. Añade el resto del agua y el resto
de los ingredientes y licúa otra vez. Cuando la cebolla y los champiñones estén blandos agrega
la mezcla de cashews y revuelve constantemente hasta que espese. Para sopa o salsa de
champiñones diluye con agua, leche de soya, de almendras, o caldo de verduras y agrega sazón

Creme Brulé de Calabaza

  • 1 1/2 cucharadita de canela
  • 1/4 cucharadita pimienta de cayena
  • 1/2 cucharadita de jengibre fresco rallado
  • 3/4 cucharadita nuez moscada recién rallada
  • 5 yemas de huevo o sustitutos del huevo (supermercados vegetarianos)
  • 1 1/2 tazas de crema para batir (también venden una de leche de coco)
  • 1/2 cucharadita de extracto de vainilla natural
  • 1/8 cucharadita de sal
  • 6 cucharadas de puré de calabaza orgánico
  • 1/3 taza más 4 cucharaditas de azúcar granulada
  • 1 cucharada de azúcar morena bien compacta

vegan thanksgiving dishesPrecalienta el horno a 325 ° F. Necesitarás una bandeja o molde cuadrado con agua hirviendo listo para el baño de maría, más 4 moldes o de 6 onzas.

Vierte la crema espesa en una cacerola pequeña y bate con la canela, pimienta de cayena, el jengibre y la nuez moscada. Calienta la mezcla de crema a fuego medio-bajo hasta que las burbujas se formen alrededor de los bordes de la olla y el vapor empiece a subir desde la superficie, unos 3 minutos. Retira del fuego y deja reposar durante 15 minutos.

En un tazón grande, bate las yemas de huevo, la vainilla, la sal, el puré de calabaza, el azúcar (1 / 3 de taza de granulada) y el azúcar morena hasta que quede suave y bien mezclada. Luego, vierte lentamente en la mezcla de la crema, revolviendo hasta que se mezclen bien. Cuélalo con un tamiz (colador). Divide la mezcla uniformemente entre los moldes y colócalos en un molde para hornear grande. Agrega el agua hirviendo para llenar el molde grande hasta la mitad de los lados de los moldes. Cubre la sartén ligeramente con papel aluminio y hornea, cerca de 30 minutos.

Transfiere de los moldes a una rejilla y deja enfriar a temperatura ambiente. Cubre con papel plástico y refrigera por lo menos 4 horas o hasta 3 días.

Justo antes de servir, espolvorea 1 cucharadita de azúcar granulada en forma pareja sobre la superficie de cada uno de los moldes.

Usa un soplete de cocina de acuerdo a las instrucciones del fabricante con mucho cuidado y si lo deseas.
