Esta receta es simple, naturalmente endulzado con las moras y libre de gluten porque el ingrediente principal es la avena. Lo puedes acompañar con un helado sin lactosa, y quedaría perfecto para un postre de fin de semana. ¿Se te antoja?

Este postre, llamado en inglés cobbler, se hace en una sartén en donde las frutas se cocinan y el tope le agrega una textura tostada y crispy, realmente deliciosa.  Lo bueno de este postre es que es completamente vegano, y gluten free.  1 porción tiene un total aproximado de 317 calorías.

Ingredientes para el Cobbler de moras vegano

Para la base

  • 3/4 taza (111 g) de harina sin gluten
  • 1/4 taza (22 g) de harina de avena sin gluten
  • 1 1/2 cucharadas (14 g) de azúcar de caña orgánica
  • 1/2 cucharada de polvo de hornear
  • 1/4 cucharadita de bicarbonato de sodio
  • 1/4 cucharadita de sal marina
  • 2 1/2 cucharadas de aceite de coco
  • 1/3 de taza de leche de almendras sin azúcar (+ 1 cucharada de jugo de limón)
  • 1/4 taza de nueces y almendras picadas (opcional)

Relleno

  • 24 oz (684 g) de moras frescas
  • 2 cucharadas de azúcar de caña orgánica o stevia
  • 1 cucharada de maicena (para espesar)

Instrucciones

  1. Calienta el horno a 400 grados F°. Coloca el aceite de coco en una sartén, y deja a un lado. En un tazón, mezcla los ingredientes secos. Y a la leche colócale el limón para que empiece a cuajar.
  2. Agrega a los ingredientes secos el aceite de coco, y ayúdate con un tenedor para tener una mezcla parecida a arena húmeda. Luego añade la leche de almendras hasta formar una masa.
  3. Coloca la mezcla en una superficie enharinada (de harina sin gluten), amasa y forma un disco con tus manos. Deja descansar.
  4. Ahora prepararemos las moras. Coloca en un bol las bayas, con el azúcar y la maicena. Luego colócalas en el sartén (previamente aceitado). Corta trozos de la masa y colócalos encima de las moras. Presiona levemente sin que se pegue.
  5. Espolvorea la parte superior con azúcar, aceite de coco y el mix de nueces/almendras. Hornea por 20-28 minutos hasta que empiece a burbujear y la masa se dore.

Sirve con helado sin lactosa. ¡yummy!


Vegan blackberry cobbler

Ingredients

For the base

  • 3/4 cup (111 g) of flour without gluten
  • 1/4 cup (22 g) of Oatmeal gluten
  • 1 1/2 tablespoons (14 g) of organic cane sugar
  • 1/2 teaspoon of  baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of sea salt
  • 2 1/2 tablespoons of coconut oil
  • 1/3 cup of unsweetened almond milk (+ 1 tablespoon lemon juice)
  • 1/4 cup of chopped walnuts and almonds (optional)

FIlling

  • 24 oz (684 g) of fresh blackberries
  • 2 tablespoons of organic cane sugar or stevia
  • 1 tablespoon of cornstarch (for thickening)

Instructions

  1. Heat oven to 400 degrees F°. Place coconut oil in a pan, and set aside. In a bowl, mix the dry ingredients. And to the milk add lemon so it can start to jell.
  2. To the dry ingredients add coconut oil, and help yourself with a fork to have a similar mix of wet sand. Then add the almond milk to form a dough.
  3. Place the mixture on a floured surface (gluten flour), knead, and form a disc with your hands. Let it rest.
  4. Now let’s prepare the berries. Place berries in a bowl with the sugar and cornstarch. Then place them in the pan (previously oiled). Cut pieces of dough and place on top of the berries. Press lightly without sticking.
  5. Sprinkle the top with sugar, coconut oil, and mix walnuts/almonds. Bake for 20-28 minutes until bubbly and crust is golden brown.

Serve with lactose-free ice cream. Yummy!
