As a good and proud Mexican descendant (my mom is from D.F ) I love Mexican food. I don’t know if is its variety of flavors, or delicious dishes for all occasions, but I find Mexican food as one of the most delicious, nutritious and completely addictive.
If like me, you love Mexican food but you’re on a little strict diet regime, this is a recipe that will surely love. The best thing is that it is a rich vegetarian recipe! and will help you keep your figure.
Light vegetarian enchiladas to enjoy
The enchiladas are a very typical Mexican food, a thousand different flavors thanks to its various sauce. Fillings vary by region, and today’s recipe will delight your palate. Follow these instructions to the letter:
Makes 4 servings
Ingredients
For the salsa
- 12 tomatoes
- 1/2 onion
- 1 garlic clove
- 1 serrano chile
- 2 cups of water
- Salt
Preparation:
Peel the tomatoes and blend them with the onion, garlic, seedless serrano chile and water. Put salt to taste and pour the sauce into a pot to cook about 20 minutes over low heat.
For the tortillas (enchiladas):
- 3/4 cup of warm water
- 1/2 teaspoon of salt
- 1 1/2 cup of cornmeal
Preparation:
To make the dough we will place the flour and salt in a bowl, pouring warm water on it until we form a uniform mass. Knead until the dough doesn’t stick fingers, without being dry. Let it stand for half an hour in the fridge, and elapsed time preparing buns the size of a golf ball.
Flour the surface where the mass stretch, and with a roller extends buns until a tortilla will cook over medium heat for one minute on each side.
For the filling:
- 500 g of cottage cheese or cottage cheese
- A bunch of cilantro
- 125 ml of cream
- 1 onion, thinly sliced
- 200 g of grated cheese
Preparation: Mix the chopped cilantro with cottage cheese and placed aside until you prepare the enchiladas
The time to assemble our enchiladas has come!
How to make the light vegetarian enchiladas:
Heat up the tortillas and places a padding portion in the middle of each. Bathe with green sauce and garnish with sour cream and onion to taste. You could add a little guacamole if you like.
