- 1/2 cup of spicy enchilada sauce (you can buy it organic in any supermarket)

- 3 cups of diced zucchini
- 1 tablespoon of chopped fresh oregano
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of black pepper
- 1/8 teaspoon of ground red pepper
- 6 cloves of garlic, minced
- 8.8 ounces of pre-cooked brown rice
- 8 (8-inch) flour tortillas wheat
- 1 cup shredded cheddar cheese (fat)
- 1/2 cup sour cream
- 1/2 cup of pico de gallo (onion, tomato and parsley)
Preparation of the vegetarian burritos
