Do you love eggplants? So do I! And this vegetarian dish is perfect to have lunch and enjoy the delicious flavor of eggplants!
It is common to see the beautiful, chubby and shiny eggplants, and we don’t know how to prepare them. The amount of plates you can prepare are infinite! So take advantage of these nourishing plant.
This recipe combines eggplants, mushrooms, tomatoes (rich in vitamin C) and saltless spices. It works as a main course and it is the perfect choice when my vegetarian friends are around!
NOTE: If you want to give it a crunchy touch, you can sprinkle parmesan before putting it in the oven.
Recipe for a vegetarian dish made out of eggplant (for 4 people)
Ingredients
- 1/2 sliced eggplant
- 1/2 cup of cut mushrooms
- 12 ounces of tomatoes
- 1/2 teaspoon of thyme
- 1/2 spoon of garlic
- 1/2 spoon of basil
- Parmesan cheese
- 1 cup of cooked integral rice.
Preparation
- Heat the oven at 325 F°.
- In a pyrex add the eggplant and the mushrooms, put them in the microwave for 3 minutes, tapless. Mix them with the tomatoes and spices, and cook for a minute more in the microwave.
- In another pyrex put the rice, the mix of eggplants and cover it with parmesan cheese. Put it in the oven for 15 or 20 minutes.
